Jam filled Butter Cookies

Everybody loves cookies. These jam filled butter cookies are the best I've tried till yet. Light and airy, soft like butter! Though pretty indulgent, these are quite easy to prepare. They require few ingredients, and the flavour combinations are multifarious. I added some mixed fruit jam to mine. This can be replaced by any other jam or even omitted. Let's get baking!

Ingredients

  • 1 Cup and 2 tablespoons of All Purpose Flour
  • 100 grams Butter ( softened)
  • 1/4th Cup Powdered Sugar
  • 1/2 teaspoon vanilla extract 
  • A pinch of salt
  • Any jam of preference.
  • 1-2 teaspoon milk
Method 
  • Add the Butter, sugar, salt and vanilla essence to a mixing bowl. Using a hand beater or an electric beater, beat this mixture till it is fluffy. This is perhaps the only important point in the entire recipe.
  • Add the flour to the mixture.
  • Without kneading a lot, bring the dough together using very little milk.
  • From this dough, make very small balls.
  • Make a dent in the balls for the jam filling.
  • Add some jam in the dents.
  • Bake at 180 degrees Celsius for 10-15 minutes.
  • This should yield around 15 cookies.

  • Add nuts of choice to the cookie dough to make it even more interesting.
