Lemon Vanilla Cookies (Wholewheat)

I can never really go without cookies! No matter what, they find their way into my stomach! So I decided to try these cookies which are tasty and, well, almost guilt free! They have almost half the butter used in regular cookie recipes and use whole wheat flour instead of all purpose flour. That’s almost as healthy as they can get!


Also, these cookies are almost no work at all! Easy and tasty, there is no reason whatsoever to not to try these at home!

Ingredients

  • 1 cup Whole wheat flour (atta)
  • 1/4 cup Vanilla Custard Powder
  • 1/4 cup Sugar
  • 30 grams butter (softened)
  • Zest of a lemon
  • Juice of half a lemon
  • 1/4 cup Applesauce
  • 1/2 tsp Baking Powder
  • 2-3 tbsp milk
Method
  • Preheat the oven at 180 degrees Celsius.
  • Beat the butter and sugar till creamy.
  • Add the lemon juice, the lemon zest and applesauce to this mixture.
  • In a separate container, sift the flour, custard powder and baking powder so that they are mixed evenly.
  • Add the flour mixture to the wet ingredients prepared above and form a dough. If needed add 2-3 tbsp of milk.
  • Form small balls out of the dough and place on a baking sheet.
  • With the help of a fork press these balls lightly to create an indentation.
  • Bake the cookies for about 20 minutes or till golden brown.
  • Cool on a rack.
  • Enjoy!
