Quick and Easy Mini Muffins

Ever wanted a quick dessert? Don't want to spend hours assembling and measuring ingredients? These mini muffins require very few ingredients, are super versatile and are super yummy. Perfect to cater to your sweet craving anytime! I have flavored them with lemon and have added roasted almonds for crunch, but any kind of flavorings and nuts can be used, or even omitted. Here goes the recipe:


Ingredients
  • 1/2 Cup Nestle Milkmaid (Condensed Milk)
  • 1/2 Cup crushed Digestive Biscuits
  • 1 tsp Cornflour
  • 1 tbsp Milk (cold)
  • 1/2 Cup chopped roasted almonds
  • The zest of half a lemon
  • 1 tsp lemon juice
Method
  • In a bowl mix the condensed milk, crushed digestive biscuits, the almonds, lemon juice and lemon zest.
  • Mix the milk with cornflour and add to the batter.
  • Put the batter in the muffin moulds. 
  • Bake at 180 degrees Celsius for ten minutes.
  • Prick the center of the muffin to make sure it has baked completely.
  • Enjoy!
