These banana bread muffins are my newest experiment. With summers almost here, the big bunches of bananas we buy become over ripe in no time. Also, with my daughter who has just learnt to walk, I need to have a reserve of quick snacks ready. And I prefer homemade food to store bought junk for her.
I made a very small batch, using only 1 banana as I was trying for the first time. Also, as I've never liked the flavour of banana in my desserts, I was a bit apprehensive. But this is so delicious that i think I'm going to make a bigger version soon! This recipe has been adapted from here.
Ingredients
- 1/3 cup All Purpose Flour
- 1/3 cup Whole Wheat Flour
- 1/3 cup Granulated Sugar
- 2-3 drops of Vanilla Essence
- 1 Ripe Banana (medium sized)
- 2.5 tbsp Oil
- 1 tsp vinegar (or lemon juice)
- 1/6 tsp Baking Soda (just a pinch)
- A pinch of salt.
- 1-2 tbsp water
Method
- Mix all the flours, salt and cooking soda together and keep aside.
- Mash the banana thoroughly using a fork.
- To the mashed bananas add the vanilla essence, water, sugar, oil and vinegar. Mix all of them.
- Add the flour mixture to the bananas and fold the mixture.
- Add a few spoons of water if needed.
- Pour the mixture in a greased container.
- In an oven preheated at 170 degrees celsius, bake for about 15 minutes or until a toothpick inserted comes clean.

Notes
- Some chopped walnuts added to the batter would enhance the taste.
- Any flavourless oil can be used.
