Leftover rice Parantha

Food leftovers often find their way to the dustbin after an agonizing stay in the refrigerator! In a bid to avoid wastage of food, money and ofcourse, love that goes into cooking, I discovered a way to use leftover rice. There are many ways to reuse cooked rice, like making cutlets, baked dishes etc. Here is a simple parantha dish which can be made from leftover pulao, or even plain rice. What better way to start your morning with! This can be easily whipped up for breakfast, and will be a sumptuous start to the busy day ahead. I have seasoned the rice with Italian herbs, but any type of spices can be used. This will also depend on the kind of spices that have been used to make the rice.

Ingredients
Leftover cooked rice/pulao
Wheat flour
Vegetable oil
Finely chopped onions
Finely chopped capsicum.
Italian herbs
Chilli Flakes
Salt and pepper

Method
Mash the rice using a potato masher.

Add the onions, capsicum and all other spices.

Stuff this and make a parantha.

Serve with curd or pickle of choice.
