I'll divide the recipe in four parts for the ease of explaining.
Ingredients
4 Rotis
Grated Carrot
Thinly sliced capsicum
Shredded cabbage
Sliced tomatoes
Rice cutlet (optional)
Mayonnaise
Mustard sauce
2 Tomatoes
1 small Onion
6-7 cloves of Garlic
Coriander leaves
Chilli flakes
Oregano
1 tsp oil
Salt and pepper for seasoning
Method
Roti
Make slightly big and thin rotis with our regular wholewheat flour. They can also be prepared in advance, stored in the refrigerator and used as required.
Tomato Sauce
- Roast the tomatoes, onion and garlic on stove top. Put them in water immediately after charring them. Peel off the skins and chop finely.
- In one tsp of oil, add the chopped garlic, chilli flakes and oregano.
- After the garlic is slightly cooked, add the onions, and the tomatoes. Cook for 2-3 minutes with the lid. Add the coriander.
- Add salt and pepper to taste.
Cutlet
Adding a cutlet would be completely optional. The wraps would taste great even without them. But i added them for that extra flavour. To a cup of cooked rice add capsicum and onion and mash them thoroughly, Add around 2 tsp of cornflour and make small patties. Add some oil in a pan and pan fry them.
The cutlets are extremely tasty and can be had on their own.
Assembling the Wrap
- Heat the rotis for 10 seconds in the microwave before assembling. This will soften them up which will make rolling easier.
- In the middle of the roti spread some tomato sauce as prepared.
- Put the cutlet on it. Add the cabbage, carrot, capsicum and tomatoes.
- Put a dollop of mayonnaise and a tinge of mustard sauce.
- Season with salt and pepper.
- Roll the wraps.
