Whole-wheat baking has caught my fancy since quite a while now. So, I was quite excited when I found this recipe for digestive biscuits which used whole-wheat flour instead of all purpose flour. In the spirit of experimentation, I slightly tweaked the recipe and reduced the amount of butter. My cookies turned out to be crisp on the outside, soft inside, but slightly denser. And of course, they have a distinct flavor of the whole wheat flour, but then they are healthier too! I would say they're a good alternative to our regular store bought cookies. Jazz them up by putting some jam, or dipping them in melted chocolate. The possibilities are endless.

- 1 cup whole wheat flour
- 30 grams cold butter
- 1/4 cup applesauce (unsweetened)
- 1/2 teaspoon baking powder
- 1/4 cup confectionery sugar
- 3-4 tablespoons milk
- Roasted and crushed almonds
- 2-3 drops vanilla extract
Method
- Cut the cold butter in the flour with the help of a fork.
- Add the applesauce, baking powder, sugar, vanilla and the crushed almonds.
- With the help of the milk make a dough.
- On a well floured surface, roll the dough.
- Cut out cookies using a cookie cutter.
- Prick the cookies using a fork.
- Bake in a preheated oven at 180 degrees Celsius for 20 minutes or until golden brown.
A word about applesauce
Applesauce is a great alternative to fat in baking and is very easy to make and to store. Simply boil some peeled apples in very little water till they are soft. Mash them up to make your applesauce. Store in an airtight container.
