Soda Bread

I just love bread. Naturally, I love to experiment with breads. This one is a relatively easy Irish bread, which has been adapted from here. It uses baking soda as a rising agent instead of yeast, so it is also an instant bread. No long hours of proofing, no tiresome kneading are involved. One needs to simply mix the ingredients, make a dough and bake it. I usually like to flavor my breads with Italian herbs, cheese etc. These are totally optional, but they do enhance the flavor several times.

Now, as this is a no knead, no wait bread, it looks kind of rustic. This is how mine looked like



Aren't they simple, yet charming? Also, these are half whole wheat. I'm sure that adds to the charm!

Ingredients
  • 1 Cup All purpose flour
  • 1 Cup Whole Wheat flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 Cup Curd (approx)
  • 15 grams butter (cold)
  • 1/2 tsp chilli flakes
  • 1 tsp mixed herbs
  • 2 cubes processed cheese
Method
  • Mix both the flours, salt, baking soda, butter, chilli flakes and mixed herbs. 
  • Rub them together till the butter and all the other ingredients are well distributed. 
  • Add the cheese. Mix everything again. Now add the curd and with very slight kneading, bring the dough together. Score it by making a cross in the middle. 
  • Now, on a well floured baking tray, bake this for 20 to 25 minutes at 200 degrees Celsius.
