Small leftovers in the fridge often lead to delectable treats! Strawberries, which are available in India in the winters often turn out to be a bit sour. Hence, these cute little strawberries promptly found their way into the freezer section of my refrigerator. Frozen fruit can be used in a number of sweet treats like smoothies, fruit yogurts etc. But I wanted to make something that could be had hot. So I looked up the internet for a pie crust recipe.And I found one here at Gemma's blog. That followed the preparation of a strawberry sauce and the creation of these warm and homely mini strawberry pies. Read on to know how.
Ingredients
- 100 grams all purpose flour
- 50 grams cubed butter (ice cold)
- A pinch of salt
- 2 teaspoons caster sugar
- 2-3 tablespoons cold water.
- 6-7 frozen strawberries
- 1 tsp cornflour (optional)
- 2 tbsp granulated sugar
- a few drops lemon juice
Method
- Pie crust
- Mix the flour, salt, caster sugar.
- Add the cubed butter and cut it into the flour with the help of a fork.
- When the butter is adequately mixed and the mixture resembles the texture of coarse sand, add the water and form a dough. Add less water in the beginning and add more only if required.
- Refrigerate the dough for 3-4 hours.
- Strawberry Sauce
- Let the strawberries defrost for at least an hour.
- Crush the frozen strawberries with the help of a potato masher.
- Add the sugar, cornflour and lemon juice. Sugar quantity may be adjusted as the sweetness of strawberries.
- Cook the mixture for 3 to 4 minutes.
- Assembly
- Line the muffin tray with the rolled pie dough.
- Fill in the strawberry sauce upto three fourths the height of the muffin.
- You can choose to make a pie dough small lattice on top or cover completely with the dough or even leave it open.
- Bake at 180 degrees Celsius for around 30 minutes.
Notes:
- My recipe made 6 mini pies. This would depend on the size of muffin tray used.
- Fresh strawberries can be used in place of frozen. Cornflour would not be necessary with fresh strawberries. Frozen strawberries tend to get watery when thawed.
